Recipe: Sweet Chilli Stir Fry
Yes I haven't posted a recipe in a long time, but now that I am back at uni, cooking for myself, I'm sure there will be more to come. This one is just a really simple, healthy dish that really anyone can make, essentially just involves throwing tonnes of different veggies and some meat together with sauce.
Ingredients: (serves 3)
- 300g chicken thigh, diced
- 3 carrots
- 3 pak choy
- 1 onion
- 2 medium garlics, minced
- 200g mushrooms
- 1 capsicum (any colour)
Sauce:
- pinch of ginger, minced
- 2 tbsp sweet chilli sauce
- 1 tbsp soy sauce
- 1 tsp black vinegar
- 1 tsp water
Method:
- Marinate chicken the night before or for at least 30 minutes for extra flavour.
- Chopped all vegetables into preferred, similar sizes.
- Over medium heat, fry off the onion and garlic in a little bit of olive oil until aroma is released and onions become translucent.
- Throw in the chicken and seal it off.
- Then add the carrots and close with lid, allowing it to steam and simmer.
- Once carrots are just becoming soft (~10 minutes), put in the capsicum and pak choy, then close lid again.
- Leave for another few minutes (~5), then throw in the mushrooms and give it a thorough mix before turning off the heat.
- Serve with rice, noodles etc. or eat as is.
