Self-raising flour - 1 cup (omit plain flour, and use 2.5 cups for thicker pancakes)
Salt - pinch
Sugar - 1/4 cup
Cinnamon powder - 1/2 tsp
Nutmeg powder - 1/2tsp
Olive oil - 1 tbsp
Soy Milk - 2 cup
Vanilla essence - 1/2 tsp
2 Mashed Banana
Method:
In a bowl, mix all liquids (oil, milk and vanilla) with the mash bananas till well combines, for a smoother a beater or stick blender may be used.
In a separate bowl, add the sugar, salt and spices, and sift in the flour.
Make a well in the dry mixture, pour in the wet mixture while stirring, until it is well combined and consistency is slightly runny. Having lumps is not an issue.
Heat a non-stick pan on low-medium heat. Using a ladle, add as much mixture to the pan as you would like for the size of your pancakes.
Flip when small bubbles start to appear on the surface of the pancake and cook for a further few minutes.
Serve with berries, cream, syrup, yoghurt or anything else! Enjoy!
