Recipe: Chocolate Moustache Biscuits

Made these funky biscuits for our house-warming last week. I hope whoever tried them enjoyed them and we really appreciate everyone coming and "warming" our house :) Now to make these shaped biscuits, you will need the specific cookie cutters (honestly don't get why they are called cookie cutters, damn those Americans and their confusing terminology). back to the point, mine are Fred & Friends branded, thanks to my friend who got them for me :) But honestly, you can make these chocolate biscuits into whatever shape you want, even just plain squares that you cut up will do.

p.s. sorry if the texture of the mixture turns out too wet (just add more flour), because I usually just eyeball ingredients rather than measure them out, so I am estimating how much I exactly put.


Ingredients: (makes 36 pieces)

  • 3-4 cups of flour (I do 1/3 self-raising to 2/3 plain, but you can do all plain)
  • 1 1/2 cup Stevia (these biscuits are subtly sweet, but you can either sprinkle more sugar onto them before baking or add a bit more sugar to the mix)
  • Large pinch of salt
  • 1 cup of cocoa powder, unsweetened
  • 250g butter, softened
  • 2 eggs
  • 1 tsp vanilla essence


Method:

  1. Preheat oven to 170c.
  2. Cream the butter and sugar in a bowl until paler in colour and fluffier.
  3. Add in one egg at a time, and the vanilla, beating in between until combined.
  4. Add in the salt and sift in the flour & cocoa powder. Either using a dough hook or stand mixer, beat in the dry ingredients, otherwise use a wooden stirring spoon and mix ingredients until a firm dough forms (i.e. becomes one lump and detaches from sides of bowl)
  5. Leave dough in fridge to cool for an hour at least, if possible, this helps the gluten relax and prevents shortening/shrinking of the dough.
  6. Otherwise roll out the dough to about 5mm thickness and have fun cutting out the shapes.
  7. Place biscuits onto a lined baking tray and into the oven for ~15 minutes. They should still be a little bit soft to touch at this stage and will harden upon cooling. Nothing worse than dry biscuits and  no milk around.
