Recipe: Gluten-free Choc Fudge Brownies


Ingredients: (makes 15 pieces)

  • 225g dark cooking chocolate (broken up)
  • 200g butter
  • 2tsp vanilla extract/essence
  • 3/4 cup natural sweetener
  • 3 large eggs (whisked)
  • 1 cup almond meal
  • 1 cup chopped walnuts


Method:

  1. Preheat oven to 170oC fan-force.
  2. On the stove, boil a third full pot of water and then turn to simmer.
  3. Place a metal bowl filled with the chocolate and butter over the pot
  4. Stir until melted and smooth.
  5. Then remove from heat and add in the vanilla and sugar until dissolved.
  6. Leave to cool for a few minutes before adding the eggs, so that they don't cook.
  7. Now stir the eggs and almond meal until well combined. Add in the walnuts and mix them in.
  8. Pour into a 25cm rectangular pan and leave to back for 25-30 minutes. Then leave to cool before cutting into portions.
