Recipe: Gluten-free Choc Fudge Brownies
Ingredients: (makes 15 pieces)
- 225g dark cooking chocolate (broken up)
- 200g butter
- 2tsp vanilla extract/essence
- 3/4 cup natural sweetener
- 3 large eggs (whisked)
- 1 cup almond meal
- 1 cup chopped walnuts
Method:
- Preheat oven to 170oC fan-force.
- On the stove, boil a third full pot of water and then turn to simmer.
- Place a metal bowl filled with the chocolate and butter over the pot
- Stir until melted and smooth.
- Then remove from heat and add in the vanilla and sugar until dissolved.
- Leave to cool for a few minutes before adding the eggs, so that they don't cook.
- Now stir the eggs and almond meal until well combined. Add in the walnuts and mix them in.
- Pour into a 25cm rectangular pan and leave to back for 25-30 minutes. Then leave to cool before cutting into portions.
